Let us introduce you our favourite wild fermented ciders, petillant naturelles and natural wines that comes with a light fizz or sparkle.
We've selected our current favourites from Decideret Cider, a small craft cidery from Copenhagen, Kupela Natural Basque Cider, Menti Giovanni and Andrea Marchetti from Italy and Kmetija Stekar from Slovenia.
Decideret Cider: Spontan 2018+2019 (Bio)
Two years of apple harvest in one bottle has formed this lightly sparkling citrusy funk brother. Mixed eating varieties from Sydhavsøerne was spontaneously fermented in 2018. In November 2019 fresh aromatic juice of Rød Aroma was added starting a new fermentation. One month of maceration with the peel/pomace from the Aroma apples.
Bottled late November 2019. Bottle conditioned and disgorged.
Decideret Cider: Hva Drikker Mølr 2019 (Bio)
Wild and juicy Cider Pét-Nat with an intense tangy expression of bergamot and pineapple that finishes with notes of bitter licorice.
This sparkling organic cider is made from the eating apple varieties Rød Aroma and Topaz from the orchards Lystgården and Ådalen on the island Fyn (Funen). It went through 2 months of maceration with the apple pomace. As a pétillant naturel (pét-nat) it was bottled during first fermentation, just before Christmas 2019, to finish it’s fermentation under the capsule.
Kupela Basque Cider : Aingura Premium Brut Cider (Bio)
Aingura (anchoring in Basque) revisits the typical flavors of acidulated and fruity apples from the Basque Country.
This brut cider “ Grand Cru” is made in our ancestral cider house of Astigarraga, with organic apples of local varieties Urtebi Haundi, Urtebi Txikia, Pazuloa and Goikoetxea, without additives or preservatives, for a quality without concession.
Balanced and refreshing, Aingura is a modern and elegant Basque cider, which remains steeped in the tradition of producing sagardo, apple wine.
Menti - Roncai sui lievi 2018 Pet Nat (Bio)
Fizzy natural wine from garganega grape.
First and second fermentation with natural yeasts.
Grape variety: 100% garganega.
Soil: flat basalt of alluvial origin.
Harvest: by hand at the beginning of September. Wilting: the grapes are brought into the winery where they are destemmed and pressed at 0,6 bar. The juice selected fermented totally by using only natural yeast in cement tanks without controlled temperature. Then occurs second fermentation in bottle by addition of Albina juice (resin garganega grape) since with natural yeasts and natural sugars. Bottled without sulphites.
Andrea Marchetti - G-Ray 2018 Vino Rosato
Andrea Pendin Started making wine in 2009 after years of working as a chef. His L'Armonia LAB projects, of which this is one, are those featuring collaborations with other natural winemakers and people important to the natural wine community across Italy. The G-Ray is a collaboration between Armonia and Andrea Marchetti, the organizer of two popular natural wine tastings in Italy, Back to the Wine and Vinessum. Their resulting wine is a pink, ramato skin contact Pinot Grigio that has a beautiful copper color. The nose is complex. At the sip it is ample, soft and rich, elegant and mineral, with an excellent finish.
Kmetija Stekar - Izi 2018
100% Ribolla Gialla spontaneously fermented in stainless steel tanks with short skin maceration. Just 10,5% alcohol. Herbal nose accented with linden scents. Savoury on the palate with a citrus core redolent of preserved lemon. Long, refreshing finish.
